Big Easy Foods of Louisiana began more than a decade ago, selling sausage and boudin in stores throughout Southwest Louisiana. Known then as French Market Foods, the company’s products quickly grew in popularity, so managing partners Larry Avery and Mark Abraham decided to build a 15,000-square-foot USDA plant on Ryan Street in Lake Charles. They also began expanding their product line to include the famous Turducken and the first completely boneless stuffed and seasoned chicken, Wild Caught Gulf Shrimp, Bacon Wrapped Jalapeno Peppers, Boudin Balls, and New Orleans Style Entrees.
